Who We Are

Our Oven

At Fat Olives, our wood fired dome oven was constructed in Italy by the Refrattari Valoriani family and is over 3900 pounds of Italian fire power.

We keep the temperature of our oven at 900 degrees Fahrenheit, which cooks our traditional Neapolitan pizza in 90 seconds.

Our Ingredients

At Fat Olives we use only the finest imported Italian ingredients to produce truly authentic Neapolitan pizza.

Our Technique

At Fat Olives, we use the proper and traditional technique used at all Vera Pizza Napoletana restaurants.

We knead our pizza dough by using a low speed mixer. We shape the dough only by hand into an 11-inch round.

Our Story

Fat Olives began in Flagstaff, Arizona as a mobile catering company over 25 years ago by award-winning chef, John Conley. John Conley and his recipes have been awarded and featured in magazines, in newspapers, and on television, including "Diners, Drive-ins, and Dives" on Food Network.

Fat Olives is 1 of 96 restaurants to be Vera Pizza Napoletana (VPN) certified and only uses the finest imported Italian ingredients to produce truly authentic Neapolitan pizza.
